White Bean And Chorizo Soup Recipe

Spanish white bean and chorizo soup or Fabada Asturiana recipe! A yummy and traditional white bean soup recipe with chorizo, an easy bean recipe for winter!

white beans 2
spanish chorizos (to cook) 2
spanish blood sausages (optional) 1 t

- Remove and discard any broken bean.
- Place white beans in a large bowl and pour over enough cold water to cover them and set aside overnight to soak (depending on the white bean variety you use this time could be different).
- Prick Spanish chorizos and blood sausages several times all over.
- Put soaked white beans, chorizos, blood sausages, 1 teaspoon of salt in a pot and cover with enough water to cover all the beans and 1 inch more and make sure that chorizos and blood sausages are above the white beans.
- Cover the pot, bring it to a boil and simmer over low heat for 30 minutes. Then skim froth off (to reduce fat), add 2 - 3 tablespoons of cold water to stop the boil for an instant, then cover again and continue simmering.
- Repeat the last step 3 times more, add saffron threads and repeat the last step one time more (two and a half hours in total).
- Transfer chorizos and blood sausages in to a plate, slice them and put them again in the pot.

Notes
- Traditionally this recipe is also cooked with some pork belly and Spanish ham, but you can cook it just with chorizo!
