Tuna Stuffed Eggs Recipe
Description
Spanish tuna stuffed eggs recipe! An easy to cook and yummy Tapas recipe with tuna and homemade mayonnaise sauce!
Ingredients

eggs (hard-boiled) 5 oz
tuna (canned in oil) 1
egg 1 c
sunflower oil (250ml) 1⁄4 t
salt 1 t
vinegar 2 oz
roasted red pepper stripsInstructions
- Boil eggs to your liking (8 - 12 minutes in a pot with boiling water).
- Peel hard-boiled eggs and halve.
- Take yolks out and grate.
- Drain cans of tuna.
- In a bowl, mix drained tuna, grated yolks (you can reserve some to garnish) and mayo.
- Fill eggs halves with the mix and garnish with some roasted red peppers strips and grated yolk.

FOR THE HOMEMADE MAYONNAISE
- Put one egg, 1 cup of sunflower oil, 1/4 teaspoon of salt and 1 teaspoon of vinegar in a recipient to blend.
- Place head of an immersion blender at the bottom of the recipient with the ingredients and switch it on (after setting the speed regulator to a low speed/whisk level).
- After some seconds you should see that the mayo is starting to get the form and texture, in that moment you can start tilting and lifting very slowly the immersion blender till homogeneous.
- Taste and add more salt if needed.
Notes
- You can use lemon juice instead of vinegar to make mayo!
- Some mayo recipes also add some ground black pepper (1/4 teaspoon should be enough).
