Pasta With Tomato Sauce And Chorizo Recipe

FOR THE HOMEMADE TOMATO SAUCE:

1. Peel and chop onion.
2. Peel and chop/grate tomatoes.
3. Heat 3 tablespoons of olive oil in a sauce pan. When warm add chopped onion and 1/2 teaspoon of salt and cook over low heat for 8 - 10 minutes.
4. Add tomatoes and 1 tablespoon of sugar to the saucepan to cut the acidity (you can also add a pinch of basil or oregano). Cook over low heat for 8 - 10 minutes.
5. Use an immersion or stand blender to puree the mixture into a sauce and set aside.

 FOR THE PASTA:

1. Bring a pot of lightly salted water to a boil. Add pasta and cook according to package instructions. When done drain off the water and set the pasta aside. 
2. Cut chorizo sausage into slices and fry in a skillet over medium heat for 3 to 4 minutes (you can add a drop of olive oil).
3. Mix pasta with the tomato sauce and fried chorizo in a baking dish.
4. Preheat broiler in your oven. Sprinkle with grated cheese on the top and broil for 3-4 minutes or until the gratin is bubbly and golden.
