Spanish Chicken With Vegetables Recipe

This Spanish chicken recipe with vegetables is a very common daily dish in Spain. Get this easy to cook and juicy chicken drumstick recipe with peppers, onion, garlic, mushrooms and spices.
Ingredients

chicken drumsticks 1⁄4 t
ground black pepper 1⁄4 t
salt 4 T
olive oil 1⁄4 t
rosemary 1⁄4 t
thyme 1⁄4 t
parsley 4
cloves of garlic 1
onion 1
green bell pepper 1
red bell pepper 5 oz
mushrooms (button) 10 oz
tomato sauceInstructions
- Wash and clean chicken drumsticks if necessary.
- Sprinkle chicken drumsticks with salt and black pepper.
- Heat a large skillet with olive oil over medium heat. When warm add chicken drumsticks, sprinkle with parsley, thyme and rosemary and stir-fry for 4 - 5 minutes each side or until golden.
- Place chicken drumsticks in a medium pot and set aside. Keep the large skillet with the olive oil for step 7.
- Peel, wash and slice mushrooms.
- Peel cloves of garlic and onion. Wash peppers. Chop garlic, onion and peppers.
- Place chopped garlic to the large skillet and cook over low heat for 3 - 4 minutes.
- Add onion and peppers and sauté over medium heat for 10 - 12 minutes.
- Add mushrooms and sauté for 5 - 7 minutes more.
- Add tomato sauce and stir-fry vegetables for 2 minutes.
- Pour vegetables sauce into the pot with the chicken, cover and cook over low heat for 20-25 minutes or until tender. Shake pot occasionally.
