Spanish Rice Recipe - Cuban Rice Ingredients: 3 c rice (white) 4 clv garlic 1 onion (medium) 4 tomatoes (ripe, medium) 3 T olive oil 1 T sugar 1/2 t salt 4 eggs 1/2 c olive oil Instructions:  FOR THE SPANISH RICEPeel and slice garlic cloves.Place a tablespoon of olive oil in a large pot and add the sliced garlic. Then cook for 3 - 4 minutes over low heat.Add the rice and stir-fry for 2 - 3 minutes.Bring a medium pot of lightly salted water to a boil.Add 6 cups of the boiling water to the large pot. For most white rice it is double the water to rice. Cook over low-medium heat for 18 - 20 minutes and drain if needed.FOR THE HOMEMADE TOMATO SAUCE:Peel and chop onion.Peel and chop/grate tomatoes.Heat 3 tablespoons of olive oil in a sauce pan. When warm add chopped onion and 1/2 teaspoon of salt and cook over low heat for 8 - 10 minutes.Add tomatoes and 1 tablespoon of sugar to the saucepan to cut the acidity (you can also add a pinch of basil or oregano). Cook over low heat for 8 - 10 minutes.Use an immersion or stand blender to puree the mixture into a sauce and set aside. FOR THE SPANISH STYLE FRIED EGGS Place half a cup of olive oil in a non-stick frying pan.Fry cracked egg over high heat.
