Scrambled Eggs With Chorizo Ingredients: 2 onions (medium) 1/4 t salt 4 potatoes (medium) 1/2 c olive oil 1/2 t salt 1/4 t ground black pepper 1 spanish chorizo sausage (to cook) 4 T olive oil 4 eggs Instructions: Peel and chop onions.Peel, wash and slice potatoes.In a large non-stick skillet heat one cup of olive oil.When warm add chopped onions and 1/4 teaspoon of salt and cook and stir over medium heat for 4 - 5 minutes.Add sliced potatoes, cover the skillet with a lid and stir-fry over low-medium heat for 12 - 15 or until potatoes are tender and beginning to crisp.Season with some salt and ground black pepper and set aside.Slice Spanish chorizo sausage.Fry for 3 - 4 minutes over medium heat the Spanish chorizo sausage in a small skillet with a few drops of olive oil (just take some of the large skillet with potatoes).Drain off the grease of the skillet with chorizo.
