Spanish Tuna Stew Recipe (Marmitako) Ingredients: 1 lb fresh tuna fillet (boneless) 1 onion 1 clv garlic 1 green bell pepper 3 T olive oil 2 lb potatoes 1 tomato (ripe) 1 t spanish sweet paprika 1 clv garlic 1 bn parsley (fresh) 1 t salt 4 c fish stock 2 bay leaves Instructions: Remove tuna skin, wash and dice into 1-inch cubes and place on a plate.Peel and chop onion and 1 clove of garlic. De-seed, wash and chop green bell pepper.Heat a stockpot or a deep wide casserole with 3 tablespoons of olive oil. When warm add the chopped onion, garlic and pepper. Cook, stirring occasionally over medium heat for 15 minutes.Peel and chunk potatoes (1,5 inches cubes).Peel and grate tomato. Add to the stockpot and sauté for 3 - 4 minutes. Then turn off the heat, add 1 teaspoon of Spanish sweet paprika and stir to combine.Place 1 clove of garlic (peeled), 1 bunch of fresh parsley and 1 teaspoon of salt. Use a pestle to grind.Add bay leaves, potato chunks, fish stock and the mixture from the mortar to the stockpot or casserole (place 1 cup of fish stock to the mortar with the mixture and then add the dissolution to the stockpot). Bring the pot to a boil and cook over low heat for 20 - 25 minutes. Shake occasionally to prevent potatoes from sticking.Add the tuna dices and cook for 4 - 5 minutes (Tuna should be juicy).Serve and enjoy your tuna stew recipe (Spanish Marmitako).
